Organic yacon root concentrate from 100% Peruvian yacon
1 cup frozen cantaloupe
1 cup frozen mixed berries
1/2 cup frozen bananas
1/4 to 1/3 cup coconut water, or more for a thinner consistency
2-3 tablespoons YacoPower
1/2 cup fresh fruit of choices to top
2-3 tablespoons toasted crushed nuts of choice
Blend the first 5 ingredients in a blender until smooth & creamy. Add more coconut water if desired. Pour into 2 small serving bowls and top each with fruits and nuts.
1/2 cup Organic Blueberries
1/2 cup Organic Raspberries
1 cup Organic plain (or vanilla) yogurt

Carefully mix all ingredients together in medium bowl. Place bowl in fridge for 15-30 mins. It will thicken after refrigeration and become more like a pudding. If desired, pour over shortcake or other desserts

2 cups of Frozen Strawberries

Blend and place in freezer until slightly frozen. Do not freeze completely. Top off with fresh strawberries for added flavor!
4 tbsp chia seeds
1 tsp YacoPower
2 tsp matcha
1 cup soy milk
1 cup of plain yogurt (sub. any kind you have)
2 fresh kiwi
1/8 cup muesli
8 oz cooked (or 1 tin, drained) chickpeas
100g/ 1 cup oat flour
100g/ 1 cup dates
100g/ 1 cup coconut oil (melted)
2 tbsp YacoPower yacon syrup
1/2 tsp Golden Latte mix
1/2 tsp salt
1/2 tsp baking powder
50g/ 1/2 cup chocolate chips (optional)
Pinch of rock salt (optional)
Soak the dates for 15 mins and drain. Mix all ingredients in a food processor. Stir in the chocolate chips by hand. Place on a greased baking tray. Sprinkle rock salt on. Bake in a medium oven 180 for 10-12 minutes. Press cookies down with back of wooden spoon to flatten. Bake for a few more minutes.
